She assured me there was no new owner and she had owned the restaurant for a number of years. I thought maybe a new owner had taken over. I called the owner the next day wondering what had happened to this wonderful place it used to be. The quality of pasta sauces were only on par with that of a bottled sauce from the local grocer and the server appeared less than thrilled to be there. was not stale but it was like it had been sitting on the counter for some time getting a firm texture that bread gets when left out. The food quality, temperature (tepid - not hot like it should be) has diminished including time to receive our meals. Have gone to Al Dente for many years and have enjoyed the food, ambience and food ambience until the last two visits. The dinners before tip came out to about $ 60 per person. It was nice to find a bar that could make a real Manhattan cocktail (how can something so simple be a lost art in so many Palm Springs establishments). I had the special sautéed Mahi Mahi with potatoes and spinach which was excellent. This is straight forward classic Italian dishes but with three nightly specials added in. It took a while for us to find out that there was a whole second page of entrees we had missed. The host who greeted us was very gracious and checked back on us frequently. There appears to be a small front patio with heaters too. inside in what is a small intimate space which had a certain charm. It was a winter night so everybody was dining. We probably had written it off in the past due to its location. We had never eaten here, although this restaurant has been around forever in the heart of the tourist area of downtown Palm Springs. Simple presentation with a somewhat musty tasting sauce? As a Seasonal Resident of the area, I had hoped to find a new favorite.unfortunately, this was not the case:( location, staff, ambience, and attitude were wonderful! The quality, taste, and prep of the food is what disappoints? I would encourage management to sit down and sample the restaurant offerings? Palm Springs needs a quality Italian Restaurant.

Chicken was a bit gummy(Sisco) and had the flavor of processed food, the pasta was nicely cooked but the sauce was full of chunks of sliced raw garlic? Didn't really work for me. The Chicken Limone was nicely presented, but fell very short on flavor and texture. Served with a thin olive oil and red wine vinegar.no balsamic.? Soups were small cups, mediocre flavor, somewhat salty. Salad was disappointing.average Costco Mozzarella, over ripe and thinly sliced tomatoes, and chopped lettuce instead of basil. Our water glasses were never allowed to drop below 1/2 full :) We shared a Caprese Salad, each had soup and an entree'. The staff was very helpful and attentive. Very nice location and the ambience was pleasant. Many favorites in the area were closed for the Summer Season. This is a difficult review to write! We decided to try Aldente for a quick dinner.
